Ingredients
- 1 ripe banana
- 1 cup rolled oats
- 1/8 tsp vanilla extract
- 1/2 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C). Tear apart a banana into chunks and smash it in a bowl with a fork until it's a pudding like consistency.
- Add vanilla and cinnamon then stir to combine.
- Add oats and mix together.
- Line a cookie sheet with parchment paper and form the mixture into 2 inch cookies.
- Bake for 10-15 min. Enjoy!
Notes
- You can easily enhance the bananas sweetness with a drizzle of honey or maple syrup (depending on the sweetness of the banana)
- You can also add a nut butter (1-2 tbsp), chocolate chips, and nute. Make it your own! I enjoy having these on the go or with my tea.
