Honey Granola

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper (I use a stainless steel baking sheet without oil or parchment paper and it works fine. Use what you are comfortable with.)
  2. Mix dry ingredients in a large mixing bowl, combine the rolled oats, chopped nuts, pumpkin spice, chia, and sea salt.
  3. Combine wet ingredients in a small bowl, whisk together the honey and vanilla extract.
  4. Mix everything. Pour the honey mixture over the dry ingredients. Stir thoroughly until all the oats and nuts are evenly coated.
  5. Spread the mixture evenly on the prepared baking sheet.
  6. Bake for 20–25 minutes, stirring every 10 minutes to ensure even toasting. Watch carefully in the last few minutes to avoid burning.
  7. Remove the granola from the oven and let it cool for about 5 minutes. Stir in the dried fruits while the granola is still warm.
  8. Store in an airtight container at room temperature for up to 2 weeks.
Notes

I love to eat about 1/2 cup of granola as cereal with a couple of tbsps of almond milk and blackberries. Enjoy as a wholesome snack or breakfast topping!
