Ingredients
- 3 cups old-fashioned oats
- 1 cup mixed nuts (e.g., almonds, walnuts, pecans, pumpkin seeds), roughly chopped
- 1/2 cup dried fruit (e.g., cranberries, raisins)
- 1/4 cup raw honey
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 tsp cinnamon or pumpkin spice
- 1-2 tbsp chia (adjust to preference)
Instructions
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper (I use a stainless steel baking sheet without oil or parchment paper and it works fine. Use what you are comfortable with.)
- Mix dry ingredients in a large mixing bowl, combine the rolled oats, chopped nuts, pumpkin spice, chia, and sea salt.
- Combine wet ingredients in a small bowl, whisk together the honey and vanilla extract.
- Mix everything. Pour the honey mixture over the dry ingredients. Stir thoroughly until all the oats and nuts are evenly coated.
- Spread the mixture evenly on the prepared baking sheet.
- Bake for 20–25 minutes, stirring every 10 minutes to ensure even toasting. Watch carefully in the last few minutes to avoid burning.
- Remove the granola from the oven and let it cool for about 5 minutes. Stir in the dried fruits while the granola is still warm.
- Store in an airtight container at room temperature for up to 2 weeks.
Notes
I love to eat about 1/2 cup of granola as cereal with a couple of tbsps of almond milk and blackberries. Enjoy as a wholesome snack or breakfast topping!
